The finest Blue Mountain coffee beans are carefully selected from products grown at an altitude of 2,100 meters, representing the best among premium selections. According to the height of the coffee-growing mountains and the size of the original beans, Blue Mountain coffee is divided into three grades: Jamaican Blue Mountain, Jamaican High Mountain, and Jamaican Prime Washed. High-grade Blue Mountain coffee is classified into three levels: Number 1 (17-18 mesh and above), Number 2 (16 mesh), and Number 3 (15 mesh). (Of course, regular Jamaican coffee can only be called "Jamaican coffee" and cannot be designated as Jamaican Blue Mountain coffee.)
However, their flavor profiles (all confirmed through cupping by specially certified personnel from the Jamaican government) are identical - only the size differs. All three grades of green beans are packed in wooden barrels for export, available in three specifications: 70kg/barrel, 30kg/barrel, and 15kg/barrel. (This time, the selection is Jamaican Blue Mountain Number 1!)
Blue Mountain coffee possesses all the characteristics of excellent coffee. Not only is it rich and mellow in flavor, but due to the perfect balance of coffee's sweetness, acidity, and bitterness, it has no bitter taste at all, with only moderate and perfect acidity. It's typically consumed as a single-origin coffee, but due to its extremely limited production and exorbitant price, the market generally uses coffee with similar flavors as a substitute.

Wallenford Estate has over 300 years of coffee cultivation history and is the oldest Blue Mountain coffee estate in Jamaica. The earliest Jamaican Blue Mountain coffee was produced by this estate and was awarded the national treasure title - Wallenford Blue Mountain Coffee, representing the highest grade of Blue Mountain coffee. With limited production, it's typically chosen by royalty and nobility, commanding a premium price.
Wallenford Factory is the only Blue Mountain coffee processing plant directly managed and operated by the Jamaican government. Its quality control processes are the most rigorous. All Blue Mountain coffee produced selects only coffee cherries grown above 4,000 feet altitude for processing. Furthermore, Wallenford shares the mission of managing and regulating the quality of Jamaican Blue Mountain coffee with Jamaica's CIB (Coffee Industry Board). The government has also placed high hopes in Wallenford to guide all Jamaican Blue Mountain estates in advancing management innovations.
