Huila is a coffee-producing region located in southern Colombia, blessed with a unique natural environment. The mild climate, fertile volcanic ash soil, and appropriate rainfall have contributed to the production of specialty coffee here. This has allowed coffee farmers to pass down traditional coffee production methods through generations. Huila's coffee has repeatedly won championships in the Specialty Coffee Association cupping competitions in recent years. With its prominent sweet and sour notes, it's suitable for different roasting levels, making it a favorite among many exceptional baristas.
In the city of Acevedo, Huila province, there is a farm called El Porvenir. The farm owner, José Bolívar Claros, along with his family and friends, dedicates themselves to producing high-quality specialty coffee here. At an altitude of 1,450-1,520 meters, with an average temperature of 17-23°C, relative humidity of 65-80%, and annual rainfall of 1,200-2,000mm. The farm has 11.83 hectares dedicated to coffee cultivation, of which 58% is planted with Caturra varieties, 22% with Castillo varieties, and the remaining 20% with Colombia varieties.
There is no commercial production here, nor is there a need for large amounts of pesticides to handle cultivation issues. Instead, they use the most scientific biological control methods to resist and manage the cultivation and care of coffee varieties. They promote and use sustainable ecological concepts to manage the coffee-producing area and have obtained 4C certification.
The coffee processing follows the traditional Colombian wet processing method. However, to protect the environment, some coffee also undergoes mechanical depulping and demucilage to reduce water consumption and protect the planet's freshwater resources.
It is precisely because of the use of the Colombian wet processing method that the inherent flavors and purity of the coffee beans are maximally preserved. This makes the coffee here smooth on the palate, with a balanced taste, noticeable sweetness, and caramel aroma. There's also a well-balanced medium acidity and body. After tasting, one cannot forget the lasting, simple sweet aroma from the fruit—optimistic, sunny, and rustic, just like the coffee farmers here. They work day and night striving for perfection in every drop of coffee in the cup.
