Among Brazilian coffees, Santos coffee is the most valued and well-known variety. For Brazilian Bourbon Santos coffee, there are no particularly outstanding advantages, but also no obvious shortcomings. This coffee has a mild and smooth taste, low acidity, moderate body, and a subtle sweetness. These flavors blend together, making it a true test for the taste buds to distinguish them individually, which is also why many Bourbon Santos enthusiasts love this coffee.

Because of its mild and ordinary characteristics, Bourbon Santos is particularly suitable for the most common roasting and brewing methods. At the same time, this unremarkable coffee is also the best ingredient for making espresso and various specialty coffees. Bourbon Santos coffee can form a golden-brown crema on the surface of espresso and give the coffee a slightly sweet taste.

The most famous Brazilian coffee is the ancient Bourbon Santos coffee grown in some estates in the Cerrado region of Minas Gerais state in southeastern Brazil. The name Santos comes from the port where coffee was shipped. Brazilian coffee beans have multiple standards for classification and grading, with the primary one being based on the export port. From the Santos port, there are "Flat Bean Santos" and the superior "Bourbon Santos." "Bourbon coffee" is best consumed when fresh because its acidity increases with age. After Bourbon coffee trees produce some new beans, the coffee beans become larger and lose some flavor, and then this coffee is called "Flat Bean Santos."

"Brazil Santos" was quite well-known in China's coffee industry in the past and probably brings back memories for many enthusiasts. Personally, I don't have any particular prejudice against Santos - at least our generation of coffee professionals and the previous one grew up drinking Santos.

In the early days, before the concept of specialty coffee emerged, coffee was just a trade commodity, what we now generally refer to as commercial beans. Commercial beans are usually not finely divided by origin, but are typically named after their country of origin and distribution ports. This is why we easily hear references to Colombian coffee (country of origin) and Mocha coffee (Yemen's Mocha port).
