Brazil's most famous coffee is the ancient Bourbon Santos coffee grown in some estates in the Cerrado region of Minas Gerais state in southeastern Brazil. The name Santos comes from the port where coffee was shipped. Brazilian coffee beans have multiple standards for classification and grading, with the primary standard being based on the export port. The Santos port exports "Flat Bean Santos" and the superior "Bourbon Santos." "Bourbon coffee" is best enjoyed when fresh, as it becomes more acidic with age. After the Bourbon coffee tree produces some new beans, the coffee beans become larger and lose some flavor, and then this coffee is called "Flat Bean Santos."
Brazilian Santos is a neutral bean, with moderate aroma, acidity, and body, and low bitterness, known for its smooth taste. It is mild, slightly acidic, with a smooth and rounded mouthfeel, and although smooth, it has a rather good aftertaste. Its neutral flavor and refreshing, harmonious taste make it an indispensable role in blended coffee, while also being very suitable for single-origin consumption. It can be said that Brazilian coffee has no particularly outstanding advantages, nor obvious shortcomings. In the eyes of many experts, high-quality Brazilian Bourbon Santos can be compared to Blue Mountain coffee, and its excellent flavor is widely praised.
