Natural ("Dry") Method [Also Known as Sun-Drying Method]
The uniqueness of this method lies in the absence of water involvement.
In natural (or dry) processing, the pulp of the berry remains attached to the coffee bean while drying, which is why coffee processed with this method has rich fruit flavors. Growers worldwide can try natural processing, but this method is more frequently used in Brazil, Yemen, and Ethiopia.
① Collection: After harvesting, coffee berries are sent to processing locations.
② Drying: Coffee berries are spread out on raised drying beds and turned to ensure the fruits don't rot or ferment during the drying process. After several days, the berries become very hard, with skins resembling raisins.
③ Hulling: The dried berries are hulled, removing all pulp, mucilage, and parchment at once. The coffee beans are then sorted.
④ Final Drying: The coffee beans are completely dried before being bagged for transport.
Sidamo green coffee beans are slightly grayish, with some areas being coarse while others are fine. They possess both gentle and bright acidity, with appropriate body thickness, featuring sweet and spicy flavors. However, unlike Yirgacheffe coffee, Sidamo coffee has citrus sweetness, along with rich berry aromas and tropical fruit flavors, creating a very rich and delicate layered mouthfeel.
