The best coffee from Mexico comes from the southeastern state of Chiapas. This state, which borders Guatemala, boasts favorable geographical conditions and climate. It is known as a perennial rainforest with an astonishingly rich biosphere. The forest region is home to jaguars, flying squirrels, monkeys, white-tailed deer, toucans, and parrots, among many other species. This is also the poorest state in Mexico.
Mexico's coffee producing regions range from Coatepec and Veracruz in the north, to the Pluma coffee from the Oaxaca region in the central part, and to the Chiapas highlands in the southernmost part, which border Guatemala's Huehuetenango region. Coffee is primarily grown in 12 states. Most Mexican coffee is washed Arabica, characterized by its very intense special aroma, somewhat reminiscent of over-fermented fruit.
The coffee beans have a high density, making them particularly suitable for dark roasting and use in coffee blends. Among these, coffee beans harvested from farms in Oaxaca, Veracruz, and Chiapas states have noticeable acidity. The small round beans from Chiapas in the southernmost part of Mexico have a mild, delicate taste and very special aroma.
The southern state of Chiapas is a state in southeastern Mexico and serves as an important bridge connecting Mexico and Central America. The southern part of the state has the Chiapas Sierra Madre mountains, with the highest terrain at elevations above 2,000 meters; the central part is the Chiapas valley, with an average elevation of 600 meters; the northern part is a volcanic plateau with an average elevation of 2,000 meters, gradually descending toward the coastal plain of the Gulf of Campeche. The Grijalva River is the main waterway. The coastal climate of Chiapas is hot and humid, while the valleys and mountains are temperate, with annual precipitation exceeding 2,000 millimeters. The geographical location of Chiapas is advantageous, giving it strong competitiveness in agricultural development and other sectors. This area is also recognized as Mexico's best coffee producing region. The coffee varieties grown here include Tapanchula and Vestra.
