FrontStreet Coffee - Introduction to the Bernadina Coffee Variety
Coffee cultivation in El Salvador began in the late nineteenth century. Although it started late, during its peak period, it was once the world's fourth-largest coffee-producing country. However, during the civil war from 1980 to 1992, El Salvador's coffee cultivation industry almost stagnated. Because of this, El Salvador has retained many relatively traditional coffee cultivation and management methods—shade trees + manual harvesting + ancient coffee varieties.
El Salvador's specialty coffee is concentrated in the Santa Ana volcanic region in the west and the Chalatenango volcanic rock region in the northwest. Its flavor inherits the mild quality of Central American coffee, with overall softness, slight acidity, and wonderful sweetness characteristics.
Pacas
Pacas is a Bourbon variety discovered in El Salvador. In 1935, Salvadoran coffee farmer Pacas selected high-yield San Ramon Bourbon varieties to plant on his farm. In 1956, his coffee trees produced higher yields than other coffee trees of the same type. Professor William G. Gill from the University of Florida determined that this was a genetic mutation of Bourbon and named it "Pacas." Pacas has high yield and excellent quality, making it quite popular in Central America. Currently, 68% of El Salvador's coffee belongs to Bourbon varieties, with Pacas accounting for 29%.
Bernadina Variety
The Bernadina variety is a hybrid of the famous Geisha variety and other parent plant varieties, initially discovered and cultivated by Finca La Esperanza.
This farm belongs to the famous Pacas family of El Salvador. The Pacas family previously discovered another excellent Bourbon variety and named it after their family—yes, the renowned Pacas variety. The name Bernadina comes from Ruperto Bernadina Merche, an administrator at Finca La Esperanza who was among the first to discover this variety.
Third place in El Salvador's Cup of Excellence, the extremely rare Bernadina bean variety offers appropriate fermentation that brings complexity while maintaining a clean texture.
