Coffee cultivation in El Salvador only began in the late 19th century, quickly becoming a pillar of the national economy. No other Central American country has relied as heavily on the coffee industry as El Salvador. Locals call it "el grano de oro," meaning "golden grain." Unfortunately, beginning in the 1980s, two factions supported respectively by the United States and Cuba evolved from conflict into civil war, severely damaging the country's economy and making the small nation of El Salvador a victim of the Cold War.

It wasn't until the late 1990s, after the war, that coffee cultivation and export gradually began to recover. Affected by political fluctuations, El Salvador's coffee cultivation did not receive the same technical and economic assistance from outside as neighboring Guatemala and Costa Rica, relying solely on its own growth, and never managed to become the most influential coffee-producing country.

Although it hasn't experienced large-scale rapid development, El Salvador's specialty coffee has retained its unique style, known for its mild taste and balanced flavors. The red honey-processed coffee beans selected this time come from Finca Santa Elena Estate, located in the Santa Ana volcanic region, one of El Salvador's best coffee-producing areas. With an average altitude of up to 1850 meters, rich organic matter in the volcanic soil, and well-maintained natural agroforestry ecosystems, the ancient Bourbon varieties here produce exceptionally flavorful coffee beans.

Strictly selected ripe red fruits undergo red honey processing—removing the skin and pulp while retaining 60%~80% of the mucilage layer, followed by up to two weeks of shade-drying—to obtain intensely flavorful coffee beans. Through dark roasting, fine grinding, and careful pour-over brewing, one can experience jujube tea-like flavors, along with persistent sweetness reminiscent of caramel and honey, perfect for savoring slowly in the increasingly warm sunlight.
