FrontStreet Coffee - Yirgacheffe Coffee Introduction
Yirgacheffe is synonymous with fruity and floral coffees, offering a clean, bright taste and lively fruit acidity that's unforgettable. Yirgacheffe is an excellent origin with numerous legendary stories and has been a popular single-origin coffee in the specialty coffee market for the past decade. When discussing specialty coffee, Yirgacheffe is almost always mentioned.
Yirgacheffe is Ethiopia's highest-altitude coffee-producing region, as well as a local transportation hub and coffee distribution center. It boasts very advanced and well-developed coffee processing equipment and expertise, resulting in extremely high coffee quality.
Fully Washed Method
This method uses washing and fermentation to remove the fruit pulp, flesh, and mucilage. Farms using the washed method must build washing pools and have access to a continuous supply of fresh water. During processing, the fermented beans are placed in the pool and moved back and forth, using the friction between beans and the power of flowing water to wash the coffee beans until they are smooth and clean.
After washing, the coffee beans are still enclosed in their parchment, with a moisture content of 50%. They must be dried to reduce the moisture content to 12%, otherwise they will continue to ferment and become moldy and spoiled.
Washed Yirgacheffe: The washed processing brings out brighter acidity, similar to citric acid, with a cleaner taste and more prominent citrus notes, followed by some black tea characteristics in the finish.
Light roasting makes the tropical fruit flavors of Yirgacheffe more pronounced and rich. The initial slight acidity is reminiscent of apple's tart fragrance, which actually enhances the coffee's body. The bitterness becomes aromatic and memorable. Fundamentally, coffee is a fruit, and maintaining that sweet-tart fruit flavor even after high-temperature roasting is what makes Yirgacheffe special.
