As is well known, Mandheling comes from Indonesia, the second largest coffee-producing country in Asia. Although 90% of Indonesia's coffee is produced in low-altitude areas such as Java and Bali, belonging to the Robusta variety with rough flavors. However, the specialty Arabica coffee produced in the high-altitude regions of northern Sumatra, Sulawesi, and Java, accounting for only 10% of its coffee production, has made Indonesia's specialty coffees like Mandheling, Golden Mandheling, Golden Top Mandheling, Lake Toba, Lake Tawa, Mount Gayo, Aceh, and Sulawesi famous worldwide due to their mellow and rich taste.
Golden Mandheling is one of the most precious and excellent specialty coffees among them. To understand why Golden Mandheling is so precious, one must first understand the unique local coffee processing method in Sumatra—the Wet Hulling method.
The Wet Hulling method removes all the fruit skin, pulp, and parchment while the coffee beans are still undried, just a few days after picking. This is the main reason why Mandheling has lower fruit acidity and higher body.
The hulled green coffee beans need to continue drying until the moisture content drops to 12%-13% before they can be stored for export. Coffee beans without any shell protection are very susceptible to defects such as moldy beans, black beans, broken beans, and debris during the drying process due to the surrounding environment. If such defects are not removed, they will seriously affect the taste of the coffee. However, this processing method greatly shortens the drying time of coffee beans, avoiding severe mold caused by the local humid and rainy weather. It can be considered a good method adapted to local conditions.
PWN not only sends people up the mountains to select high-quality cherries when the coffee cherries are ripe but also adds their own unique processing steps when using the traditional Indonesian Wet Hulling method. Moreover, strict quality control is implemented in every processing step, and before export, it undergoes 5 manual hand selections, almost reducing the defect rate to zero. The final green beans have uniform color, dark green appearance, relatively large bean size, and clean taste, presenting a fascinating golden color after prolonged storage.
The Golden Mandheling from PWN company has a clean taste, basically without the typical earthy, herbal, and woody flavors of ordinary Mandheling. The flavor is strong and rich, with a creamy and mellow mouthfeel and brown sugar sweetness, complemented by fresh and soft acidity and nutty aroma.
