Dipilto is one of the smallest cities in Nicaragua, covering an area of 106 square kilometers. 90% of its 5,000 inhabitants live in rural areas. Dipilto is famous for its pine forests, warm climate, religious enthusiasm, loyal people, and high-quality coffee.

Coffee cultivation is an important tradition maintained by the residents of Dipilto. The fertile soil, rich in organic matter, and elevation above 1,200 meters provide suitable climate conditions for coffee growth. Dipilto's traditional Arabica coffee varieties are suited to the average annual temperature of 20 degrees Celsius and rainfall, with Caturra and Bourbon varieties being predominant. Under the shade of trees, coffee plants coexist harmoniously with nature, while dedicated plantation management also provides ideal conditions for producing high-quality coffee.

Brewed using the Chemex method, I didn't experience floral and lemon aromas during the smelling phase—just the burnt aroma that coffee should have. Perhaps this is due to personal reasons, and I regret not experiencing these characteristics. However, the first sip surprised me unexpectedly. If no one had told me what this bean was, I would have guessed it was Shuery. That's right, because it also has a sweet taste, no acidity or astringency, and a strong nutty flavor that even overpowers the chocolate notes. In the latter half of the tasting, there's a very distinct burnt aroma in the mouth, similar to having just smoked a cigarette.

Tasting Notes

Aroma: Burnt aroma with slight floral notes.

First Half: Sweet entry with chocolate notes following.

Second Half: Distinct nutty flavors.

Aftertaste: Residual nutty flavor, similar to smoky notes.

Recommended for: People who like to drink coffee but don't enjoy an initially bitter taste. It's easy to drink while fully preserving coffee's roasted aroma.
