Some people believe that the natural flavors of the beans themselves are overshadowed by "artificial" flavors after processing. The bean variety itself might be mediocre, yet it receives high scores due to the processing method. Does this really count as "cheating"?

Others argue that in food engineering, using microbial fermentation to create flavors is commonplace. We've been brewing wine for thousands of years—should that be considered unacceptable too? Since the processing involves no artificial flavorings or chemical additives, let's temporarily set aside these principled questions and examine the miracles that food bioengineering has created for us.

Therefore, we'd like to introduce this Lychee Orchid coffee bean, as it represents a classic case of authentic brandy barrel fermentation. You can clearly identify brandy flavors along with lychee notes that emerge during the fermentation process. The flavor profile is highly recognizable, rich, elegant, and completely harmonious, providing immense pleasure.

"Lychee Orchid" comes from the coffee-producing region of Honduras, located in the narrow waistland connecting North and South America, also part of the global volcanic belt. The rich phosphorus content, humus, and aeration porosity of volcanic soil allow coffee trees to fully absorb nutrients and flavor compounds. The high altitude creates significant temperature differences between day and night, with abundant rainfall and pleasant climate.

In recent years, Honduras coffee has been gaining increasing attention. From cultivation, processing to export transportation, technological innovations have been implemented at every step, fully leveraging the terroir conditions and consistently presenting excellent specialty coffees to the world. The variety of this bean is Typica, renowned for its clarity, brightness, and prominent acidity. During processing, the ripe harvested cherries first undergo refined washed processing, then are placed in original brandy oak barrels for low-temperature (15-20°C) fermentation for 30-40 days, followed by shade drying. The processed beans gain more flavor layers, a rounder mouthfeel, and exhibit more distinct fruity characteristics.

Brewing Recommendations

Start timing when you begin pouring, then use medium water flow to pour until reaching 120g, stopping to wait until the water level drops just before exposing the coffee bed. Perform the third pour until reaching 225g, then stop. Remove the dripper once the coffee has finished dripping through. Total extraction time: 2 minutes.
