Kenyan Coffee Processing Methods
There are generally two processing methods: washed and natural. Meticulous control of the coffee processing process can improve coffee quality. Taking FTOK (composed of 12 cooperatives) as an example - every Tuesday, coffee farmers deliver coffee cherries to the cooperative. The coffee beans are de-pulped at the cooperative, and after 72 hours, fermentation begins. The fermentation time is 72 hours, followed by the drying stage.
Washed processing is the most common method in Kenya, but in the central region, natural processing is also used for low-density coffee beans. Compared to washed processing, natural processing requires greater investment, higher time and labor costs, and presents greater challenges in quality control.
Each region has its unique climate and growing environment, and within each region, there are many micro-batch producing areas.
Additionally, Kenya has numerous coffee varieties. Among them, SL-28 and SL-34 are special varieties rarely grown in other countries/regions outside Kenya. SL-28 and SL-34 are grown at high altitudes, with complex flavors being their representative characteristics. Furthermore, K7 is widely cultivated in low-altitude areas and has strong drought resistance. Other famous Kenyan coffee varieties include Batian and R11, which were developed in laboratories and have strong resistance to pests and diseases.
