If someone claims to love specialty coffee but has never tried Yirgacheffe, then they might not be a true coffee enthusiast. If someone truly loves specialty coffee, even if they can't appreciate its taste, they will definitely try to taste and appreciate it. This is the charm of Yirgacheffe.

People who frequently drink coffee have undoubtedly heard of Yirgacheffe more or less. Many coffee enthusiasts' first introduction to coffee was likely through Yirgacheffe.

1. Natural Sun-Drying Method (Natural/Dried-in-the-Fruit)

Coffee cherries begin the sun-drying process immediately after harvesting without any processing. This is the oldest existing processing method. The drying process typically lasts for about 4 weeks. The process must be extremely rigorous to ensure that the coffee doesn't lose any flavor or pick up any off-flavors. The natural sun-drying method requires extremely dry local climate conditions. In some regions, people use drying machines to assist in the coffee drying process (the hot air from the drying machines can accelerate the drying process and help control the degree of drying).

Sun-dried grades are divided into Gr-1, Gr-3, Gr-4, and Gr-5. The highest grade G1 sun-dried Yirgacheffe has rich fruit aroma and a hint of fermentation. Opening a bag of freshly roasted G1 sun-dried Yirgacheffe coffee can completely subvert one's original understanding of coffee. It smells so sweet and fragrant that only those who have tasted the highest grade sun-dried Yirgacheffe will believe that coffee is a fruit.

Sun-dried Yirgacheffe has a subtle fermented wine aroma with slightly more pronounced bitterness, a much richer texture, honey sweetness, cocoa notes with hints of spice, a full body with a persistent aftertaste. The rich texture and unique soft floral notes sweep across your palate, leaving an endless aftertaste.
