Why is it called Yirgacheffe?

Yirgacheffe coffee refers to coffee produced in the Yirgacheffe region of Ethiopia. Yirgacheffe is the name of a small local town with an altitude of approximately 1,700-2,100 meters. This area has been a wetland since ancient times. In the local language, "Yirga" means "settle down" and "Cheffe" means "wetland," so "Yirgacheffe" means "let's settle down in this wetland." The Yirgacheffe region is one of the highest altitude coffee-growing regions in Ethiopia. Today, Yirgacheffe coffee has become synonymous with Ethiopian specialty coffee.

Cultivation Conditions

Coffee trees are mostly planted in farmers' own backyards or mixed with other crops in farmland. Each household's production is not large, making it typical pastoral coffee. These mountain villages are shrouded in mist, with spring-like seasons throughout the year. Summer brings gentle breezes - cool but not hot, rainy but not damp, and winters are free from frost damage. This unique environment nurtures the distinctive regional flavor of citrus and floral notes.

In terms of processing methods, Yirgacheffe traditionally uses natural processing, employing the most ancient natural drying method. However, starting in 1972, Ethiopia introduced Central and South American washed processing techniques to improve quality. This made Yirgacheffe's jasmine fragrance and citrus aroma clearer and more refined, elevating it to become a masterpiece among world specialty beans. The exquisite washed processing technique played an indispensable role. As the birthplace of coffee, Ethiopia's thousand-year history of cultivation and processing traditions has produced high-quality washed Arabica beans.

Flavor Profile

The "Yirgacheffe flavor" features rich jasmine, lemon, peach, almond sweetness, and tea notes, among other flavors. The tasting experience can be summarized in one sentence: when the coffee enters the mouth, a hundred flowers bloom! It's like the comfortable sensation of flowers touching the taste buds and olfactory cells.

In addition to the floral notes, the delicate body is like silk massaging in the mouth - a marvelous tactile sensation. Lightly roasted Yirgacheffe has unique lemon, floral, and honey-like sweet aromas, with soft fruit acidity and citrus flavors, creating a fresh and bright taste.
