Ethiopia is the famous birthplace of Arabica coffee beans. Among all producing regions, Sidamo and Yirgacheffe are the most outstanding. People have maintained the tradition of harvesting wild coffee beans to this day. Coffee gardens at altitudes exceeding 1500 meters have formed a unique coffee terroir through thousands of years of evolution and adaptation. Ethiopian coffees are mostly washed beans, with rich floral aromas, smooth and subtle textures, plus strong chocolate and fruity flavors.
Ethiopian coffee grown in natural wild environments is called "wilderness coffee," retaining the most primitive and natural flavors of coffee beans, with the most direct and complete expression of terroir. Its rich and complex fruity aromas made it famous internationally almost overnight, becoming sought after by connoisseurs and commanding high prices.
Most Ethiopian coffee processing is washed, but natural processing is becoming increasingly popular. The three main coffee producing regions are: Sidamo, Harrar, and Kaffa. Typically, beans produced here are named directly after their origin. For example, Yirgacheffe is the name of a small town in Sidamo province. The basic characteristics of Ethiopian coffee beans are incredibly perfect body and flavor, with an endless aftertaste.
Yirgacheffe is a small village in the Sidamo province of Ethiopia. In ancient Ethiopian language, "Yirga" means "settle down," and "Cheffe" refers to "wetland." Therefore, Yirgacheffe has a romantic meaning—"let us settle and make a living in this wetland."
Initially, Yirgacheffe coffee trees were cultivated by European monks (somewhat like Belgian monks growing wheat to brew beer), later managed by farmers or cooperatives. Yirgacheffe is actually composed of surrounding coffee communities or cooperatives, including Idido near Misty Valley, Harfusa, Hama, and Beloya, all using washed processing, though a small amount of premium beans are intentionally natural processed to enhance charming fruity aromas and body. These mountain villages are shrouded in mist, spring-like all year round, with gentle summer breezes—cool but not hot, rainy but not humid, and winters without frost damage—cultivating unique regional flavors of citrus and floral notes. Coffee trees are mostly planted in farmers' backyards or mixed with other crops in fields. Each household's production is limited, making it typical pastoral coffee.
Changing coffee flavors through planting and varieties requires at least several years. In recent years, to innovate, major coffee producing regions worldwide have begun to embrace special processing methods to alter coffee flavors.
