Ethiopia in Africa is considered the birthplace of coffee and is also an important producing region. Among these, Yirgacheffe, located in the Sidamo province, is renowned far and wide and is one of the world's finest coffee-producing regions. Ethiopian coffees are mostly grown in highlands at 1800-2300 meters, processed using either natural or washed methods, and possess rich floral notes and citrus fruit flavors.
The holy land of coffee, the legend of coffee originated in Ethiopia, where humans first discovered coffee trees. To this day, Ethiopia's main coffee harvest still comes from wild coffee trees in the forests, which also house the world's most complete collection of coffee tree varieties.
Yirgacheffe coffee beans are among the most distinctive coffees in the world, rare and expensive, produced in the plateau region at 4000 feet above sea level in Ethiopia's Sidamo province. They represent the pinnacle of African washed coffee, featuring unique citrus and lemon fruit aromas combined with jasmine fragrance. After medium roasting, they exhibit gentle acidity, while deep roasting brings out rich aromas. Therefore, Yirgacheffe is suitable for both medium and dark roasting, making it ideal as a single-origin coffee.
Most Yirgacheffe coffee is processed using the washed method, where beans are fermented in washing tanks for about 72 hours to remove the pulp, then dried directly outside the processing plant. After manual selection, the green beans undergo quality inspection by the Ethiopian Coffee and Tea Authority and are exported through competitive bidding.
Coffee trees originated in Ethiopia, where they were originally wild plants. The name "coffee" derives from the Ethiopian town "Kaffa." In fact, many coffee trees in Ethiopia remain wild today, and the coffee cherries growing on these trees are full-bodied with a subtle wine-like aroma.
