In fact, the name Yirgacheffe is just a general term that actually includes too many varieties. Yirgacheffe originally only referred to beans produced in this area, but today, Yirgacheffe has actually become a synonym for a flavor system, specifically referring to ancient varieties with rich fruit acidity and floral flavors. Genetically speaking, such varieties are the most primitive types of coffee, growing in the vast pristine forests of Ethiopia, often in a particular forest area.
There may be several dozen types of coffee trees coexisting in one forest area, so Ethiopian beans are not cultivated in artificial plantations but are manually picked by diligent African brothers, then collected at nearby processing plants for unified production and processing. A Yirgacheffe bean is actually often picked from different coffee trees, and these different varieties combine to create thousands of diverse, mysterious, and indescribably charming characteristics.
Yirgacheffe is a small town at an altitude of 700-2,100 meters, synonymous with Ethiopian specialty coffee. This area has been wetland since ancient times; the ancient word "Yirga" means "settle down," and "Cheffe" means "wetland." The coffee production methods and flavors here are so outstanding that Ethiopian coffee farmers compete to be proud of their coffee's Yirgacheffe flavor characteristics, making it the most renowned coffee-producing region in Africa.
Initially, Yirgacheffe's coffee trees were cultivated by European monks, later taken over by farmers or cooperatives. Yirgacheffe is actually constructed from surrounding coffee communities or cooperatives, generally including: Hafursa, Hama, and Biloa.
These mountain villages are shrouded in mist, spring-like throughout all seasons. Summer brings gentle breezes, cool but not hot, rainy but not damp, and winter without frost damage, nurturing unique regional flavors of citrus and floral notes. Coffee trees are mostly planted in farmers' backyards or mixed with other crops in farmland.
