Around 2010, a trend of drinking specialty coffee began to emerge in China. Enthusiasts of specialty coffee are all captivated by the floral and fruity aromas of Yirgacheffe. The unique red wine fermentation aroma of natural processed Yirgacheffe particularly leaves a lasting impression and unforgettable aftertaste.

Yirgacheffe comes from Ethiopia, the birthplace of coffee.

Yirgacheffe is a small town located at an altitude of 1,800-2,300 meters, with an average annual rainfall of 1,400-1,800mm. The soil consists of red-brown earth rich in minerals and organic matter. Located in southern Ethiopia, it has become synonymous with specialty coffee.

This area has been a wetland since ancient times. In the local language, "Yirga" means "to settle down" and "Cheffe" means "wetland." Coffee from this region has rich fruit aromas, the sweet and sour taste of ripe fruits, a full and smooth body, and a long-lasting aftertaste. This has led Ethiopian coffee farmers to take pride in their coffee displaying Yirgacheffe characteristics, making it the most renowned coffee-producing region in Africa.

The natural processing method involves picking fully ripe coffee cherries and immediately placing them on drying beds for sun-drying, allowing the sweetness of the fruit pulp to be absorbed by the beans. This method is particularly suitable for water-scarce regions or very dry environments. To prevent over-fermentation or mold, the fruits must be regularly turned on the drying beds to ensure even air circulation and drying. Once the fruits are sun-dried, they are sent to the dry mill to remove the dried fruit pulp. The natural process is quite complex and prone to failure, but well-executed natural processing can bring more intense sweetness, a fuller body, and more refined acidity.

Flavor Profile

Refined natural processed Yirgacheffe, when brewed using a siphon with a 1:12 coffee-to-water ratio, reveals distinct floral and fruity aromas. Rich and bright citrus acidity accompanies caramel aftertaste and chocolate richness, creating a flavor profile that is intense and varied.
