Coffee first originated in Ethiopia, Africa. On this ancient land, a magical fruit was cultivated that continues to influence the world today. If someone claims to love specialty coffee but hasn't tried Yirgacheffe, they're definitely not a true coffee enthusiast. If someone loves specialty coffee, even if they can't accept its taste, they would certainly have tried to like it. This is the charm of Yirgacheffe.
Washed Yirgacheffe
Washed processed Yirgacheffe is relatively much more premium. The ripe coffee cherries are picked and directly placed in water for washing, then enter a hulling machine to remove the outer fruit skin from the coffee beans. The beans are then soaked in clear water pools for 24 hours to thoroughly wash away the mucilage on the surface, followed by air-drying treatment, and finally sealed for storage. When needed for trade, the coffee undergoes further refined processing, resulting in coffee that is much purer than naturally processed coffee.
This method not only completely showcases Yirgacheffe's unique flavors but also yields the highest grade of green coffee beans. However, coffee obtained through washed processing loses a significant amount of sugar due to prolonged soaking. Therefore, it loses the red wine aroma found in natural processing. This is something that many coffee enthusiasts find regrettable.
Regardless of the processing method used, Yirgacheffe's flavor is quite remarkable. Brewed Yirgacheffe has a relatively strong jasmine fragrance. The lemon and green apple acidity in the front palate will give you a revolutionary perception of coffee's flavor. The middle section is typically where the roaster showcases the best flavors, which might include grass or sweet corn notes. Of course, this varies from person to person. The chocolate notes in the aftertaste will leave you with an endless回味. It is precisely this flavor profile that makes many people unable to resist this coffee, leaving their mouths watering.
