Yirgacheffe - Aricha
Aricha belongs to a processing station within the Yirgacheffe region. Coffee from the surrounding areas sent to this processing station can all be called Aricha. Since Ethiopian coffee is graded by the national government and managed uniformly, very little coffee is produced, processed, and sold directly by individual farms. Generally, coffee is selected by region and grade.
In fact, Yirgacheffe is composed of surrounding coffee communities or cooperatives. These mountain villages are shrouded in mist, with spring-like weather throughout the year. Summer brings gentle breezes that are cool but not hot, rainy but not humid, while winter avoids frost damage. This environment nurtures a unique "regional flavor" with citrus and floral notes. Each household produces limited quantities, making it typical pastoral coffee.
Bagersh (a Yirgacheffe coffee trader) carefully selected Yirgacheffe and Sidamo varieties to successfully launch three sun-dried beans—Ardido, Biloa, and Aricha (also known as Arecha). The secret lies in exquisite sun-drying techniques. Without the meticulous screening process, even the best varieties would struggle to guarantee the absence of off-flavors. Bagersh has established strict standards for collecting red coffee cherries. Before sun-drying the coffee cherries, unripe green cherries or defective ones are manually removed. During the sun-drying process, damaged or moldy cherries are eliminated again. After two weeks, the fructose and essence from the pulp fully penetrate the coffee beans as moisture content drops to 12%. The hardened pulp, mucilage layer, and parchment beans are then scraped clean together with a hulling machine. The extracted coffee beans undergo grinding and color testing (using equipment familiar with the latter part of the process). After eliminating defective beans, any remaining flawed beans missed by machines are manually removed by visual inspection. This layered screening process creates the clean and refined quality of Yirgacheffe or Sidamo sun-dried beans, characterized by rich, captivating fruit aromas. The retro style of Yirgacheffe sun-dried coffee pursues clarity, purity, and abundant sun-kissed fruitiness.

Yirgacheffe belongs to the Arabica species and has smaller beans. Its small size is accompanied by clean and rich flavors. It is mostly grown in high-altitude areas with weak disease resistance. In the processing of sun-dried beans, this Yirgacheffe performs exceptionally well, with clean silver skin.
"Ethiopia is located between 3 and 14 degrees north latitude. Coffee cultivation covers nearly 600,000 hectares. The southern and eastern regions have two rainy seasons annually, while the western region has only one. This distribution of rainy seasons allows Ethiopia to harvest coffee year-round. Coffee grows at altitudes between 550-2,750 meters. The soil in the western and southern regions consists of volcanic rock, rich in minerals and slightly acidic. The average annual temperature ranges from 15 to 25 degrees Celsius, creating an excellent growing environment for Arabica.
Knowledge Point: Ethiopia is Africa's largest Arabica coffee-producing country. In its ancient forests, over 2,000 natural coffee varieties grow, with less than five percent having been thoroughly studied to date.
