Natural Process
The oldest coffee processing method, used by Arabs over a thousand years ago. Natural process coffee offers complete natural mellow flavor, soft acidity, and uniform bitterness. Processing method: After harvesting, coffee cherries are directly dried in exposure fields for 3-4 weeks, turned several times daily to ensure even heating. The dried coffee cherries separate from the outer pericarp, and after drying to 9% moisture content, a hulling machine completely removes the outer skin and silver skin.
Washed Process
A technique invented by the Dutch in the 18th century. Washed beans currently account for about 70% of all coffee production and are suitable for rainy regions. Coffee processed by the washed method has bright flavors, stronger acidity, and fewer impurities. Processing method: First, large amounts of water are added to coffee cherries to wash away fruit impurities and select beans. Then a depulper removes the outer skin and pulp. Next, fermentation for 18-36 hours allows fermentation bacteria to dissolve the pectin that was originally insoluble in water, followed by thorough cleaning. Finally, sun-drying to 9% moisture content, and a hulling machine removes the silver skin.
Miel Process
The outer skin of coffee cherries is removed while preserving the mucilaginous pulp layer. Instead of using fermentation to remove the pulp, it's left with this layer during direct drying, after which the dried pulp layer and silver skin are removed. Coffee processed this way retains the original sweet flavors of coffee cherries, typically with delicate caramel and fruit aromas.
Knowledge Point: The best crops are grown in areas with higher altitude, fertile soil rich in phosphorus, nitrogen, potassium, and moderate climate.
