Anaerobic Processing Method

The anaerobic processing method is a special processing technique that has taken the world by storm. Let me briefly introduce what anaerobic processing is.

Fully ripe coffee cherries are selected, with sugar content reaching a certain level and sufficient quality. They are placed in a completely sealed, controllable container filled with carbon dioxide for fermentation. During the fermentation process, temperature and pH changes are strictly controlled. When the sugars in the pectin and mucilage are just completely consumed, the container is immediately opened to stop fermentation, and the beans are quickly dried under sunlight to avoid over-fermentation.

Coffee beans produced using this processing method have fuller body, bright wine aromas, low acidity, and excellent sweetness.
