Honey processing, also known as Pulped Natural, differs mainly from natural processing in whether the pulp is removed before or after drying. The so-called honey processing refers to the process of making raw beans by drying with the mucilage intact. After the outer pulp of the coffee beans is removed, there remains a layer of viscous gelatinous substance. It does not mean that honey is added during the coffee bean processing process, nor does it necessarily mean that the coffee tastes like honey, but rather that the color of the coffee beans during the drying process looks like the color of honey.

Due to different degrees of processing, the degree of "honey" also varies. We can generally divide it into: yellow honey process, red honey process, and black honey process.

Yellow Honey: About 40% of the pectin is removed, and the drying method requires the most direct heat absorption, receiving the most sunlight for drying, taking about 8 days to reach a stable moisture content.

Red Honey: About 25% of the pectin is removed. Compared to yellow honey, the drying time is longer and requires reducing direct exposure to sunlight, even using shade nets, taking about 12 days.

Black Honey: Almost no pectin processing is needed. The drying time is even longer, requiring at least about 2 weeks, using coverings to avoid direct sunlight exposure, allowing sufficient sugar conversion.

Specific processing workflow: Similarly, the first step is still to remove defective beans. The outer skin is removed first, leaving all or part of the pectin layer to be moved to drying racks for sun exposure. This reduces the moisture content of the coffee cherries to 10% - 14%.

Finally, use a hulling machine to remove the silver skin adhering to the coffee beans, and you're done.

Flavor: Honey processed coffee retains the original sweet flavor of coffee cherries, while having the cleanliness and acidity of washed coffee, as well as the heavy body of natural coffee, with balanced sweet and sour notes and rich mellow taste.
