Due to the numerous varieties of Brazilian coffee, they cannot be simply categorized under the term "Brazilian coffee." Like other Arabica coffees, Brazilian coffee is referred to as "Brazils" to distinguish it from "Milds" coffees. The vast majority of Brazilian coffee is unwashed and sun-dried, classified according to their state of origin and shipping ports. Brazil has 21 states, with 17 producing coffee, but four states account for 98% of the total production: Paraná, São Paulo, Minas Gerais, and Espírito Santo. The southern state of Paraná has the most impressive output, accounting for 50% of total production.

Although coffee has diversity, Brazilian coffee suits popular tastes. For example: coffee produced in the northern coastal regions has a typical iodine flavor, reminiscent of the sea when consumed. In Brazil, the coffee with the highest production is Robusta coffee. This coffee sold in supermarkets accounts for 15% of total production.

The three major specialty coffee producing regions in the west are Cerrado in the central-west of Minas province, South Minas, and Mogiana. However, not all coffee produced in the Cerrado grasslands can bear the prestigious Cerrado name—only coffee grown on the plateaus of central-west Minas province at elevations of 1,100-1,300 meters, with high altitude and fertile soil, can produce high-quality coffee that is sweet, full-bodied, and free from earthy flavors.

Cerrado is a renowned high-quality coffee producing region in Brazil. Its processing methods are more refined. Unlike Brazilian Santos coffee which uses natural processing, Cerrado coffee is mostly processed using washed or semi-washed methods. Premium Cerrado coffee contains nutty aromas, with a flavor profile similar to Brazilian Santos but more refined and clean. The aroma is moderate, with a soft and smooth mouthfeel, ending with a slightly sweet taste.

Characteristics: Rich in nutty and almond flavors, with sweet fragrance and fruity acidity. A delicate aroma with slight sweetness, comfortable and mild flavor, and a finish with fruity notes.
