FrontStreet Coffee - Introduction to Brazil's Cerrado Region
Brazil has 21 states, with 17 states producing coffee. However, 7 of these states have the largest production, accounting for 98% of the country's total output.
The 7 states are: São Paulo (Mogiana, Centro-Oeste), Paraná (Norte Pionerio do Paraná), Bahia (Planalto da Bahia, Cerrado da Bahia, Atlantico Baiano), Espírito Santo (Montanhas do Espírito Santo, Conilon Capixaba), Minas Gerais (Sul de Minas, Cerrado Mineiro, Chapada de Minas, Matas de Minas), Rondônia (Rondônia), and Rio de Janeiro.
Brazil, located on the South American continent, produces approximately 40 million bags of coffee annually (about 30% of global production), making it the world's number one coffee-producing country. The country has 5 main provinces that produce coffee beans—Paraná, São Paulo, Minas Gerais, Espírito Santo, and Bahia. The Cerrado region is located on the plateau in the southern part of the "Cerrado grassland climate zone" that spans eight provinces in central Brazil and covers about two million square kilometers. It's worth mentioning that this Cerrado grassland is the largest tropical savanna (or tropical steppe) in South America, rich in native plants and animals, with climate and ecological characteristics clearly distinct from the Amazon basin in northern Brazil.
The so-called Cerrado Coffee Region refers to the area where the grassland extends into Minas Gerais province at elevations between 850-1200 meters. The flat and open terrain of the grassland is particularly suitable for establishing large estates. Combined with the distinct dry and wet seasons and the relatively cooler climate of the plateau, coffee berries tend to ripen consistently, allowing the Cerrado region to stand out among Brazil's many producing areas and be considered a quality choice for Brazilian beans.
Raw beans processed using the natural method have hints of green grassland and faint strawberry berry notes in their dry aroma. They have low acidity but a rich mouthfeel with molasses-like sweetness, with a soft and delicate texture. As the coffee cools, it reveals rich and lingering notes of bittersweet almond chocolate mixed with blueberry and strawberry. The complexity and elegance of the natural processing method can be described as perfectly balanced.
Brazilian coffee beans are large in size with rich aroma, having moderate bitterness and high-quality acidity. The overall mouthfeel is smooth with low acidity, and careful tasting reveals an endless aftertaste. Brazilian coffee's flavor profile features lower acidity, complementing the sweet and bitter notes of coffee, making it extremely smooth on the palate with a faint grassy aroma. The light fragrance with a slight bitterness, sweet and smooth mouthfeel, and refreshing aftertaste make it delightful. Therefore, without good Brazilian coffee, there's no good espresso.
