Antigua Growing Region Introduction
Flores is a brand coffee under La Minita, with growing region located in Antigua, Guatemala, which is a highland surrounded by active volcanoes at an altitude of 1,850 meters. It is the country's most award-winning and famous growing region.
Antigua has little rainfall in summer and occasionally experiences frost in winter due to extreme cold, which actually isn't suitable for coffee tree growth. Fortunately, being located in an active volcanic zone, the lightweight pumice from volcanic eruptions falls into the soil and cools down. These pumice stones have many tiny pores that are excellent for moisture retention. Combined with large numbers of shade trees planted in the estate, this prevents coffee trees from suffering cold damage in winter. These factors that overcome adverse conditions, along with the significant day-night temperature difference, create Antigua's unique microclimate, giving the coffee beans here a subtle smoky flavor and rich fruity aroma.
La Minita is famous for its excellent cultivation, processing techniques, and extremely strict quality control. They commission Las Pastores, the largest water wash processing plant in Antigua, to process the raw beans using these standards and name the coffee "Flores." In addition to maintaining the original regional flavor, the dry aroma carries rich floral and tea notes. After tasting, it reveals lime acidity and berry flavors, then transforms into a honey-like aftertaste. Excellent clarity and rich layered complexity are the characteristics of this Flores coffee.
La Minita Estate Coffee Cultivation
La Minita Estate does not use pesticides. Due to the climate and altitude formed by the estate's geographical advantages, natural conditions limit the number of pests, and the few pests present do not significantly impact the coffee trees. As the rainy season comes to an end, coffee fruits begin to ripen. The green fruits start turning red, but coffee fruit ripening is very slow and uneven, unlike the rapid and consistent flowering. Therefore, harvesting work must be handled more carefully, collecting only fully ripe deep red fruits.
