FrontStreet Coffee - An Introduction to Pour-Over Coffee Grind Size

Different coffee grinders have different adjustment dials, so you should check your coffee grinder model and carefully read the instructions to determine the direction and intensity of the dial settings. In general, if you maintain the habit of regularly checking your grinder settings, you'll only need to make very small adjustments. Moving the dial by just 3 millimeters can change the coarseness of the powder. Although 3 millimeters is a very small number, the grinding time for the same coffee beans will change by 3-5 seconds.

Small Fuji Practical Parameters:

  • #4.5 (Suitable for light taste or reducing the burnt bitterness of dark roast beans)
  • #3.5~#4 (Medium concentration, suitable for light roast, medium roast, or medium-dark roast)
  • #3 (Suitable for heavy taste, but not recommended for dark roast beans)

Small Flying Eagle Practical Parameters:

  • #4 (Suitable for light taste or reducing the burnt bitterness of dark roast beans)
  • #3~#3.5 (Medium concentration, suitable for light roast, medium roast, or medium-dark roast)
  • #2.5 (Suitable for heavy taste, but not recommended for dark roast beans)

The smaller the grinder setting, the finer the grind, and the richer the coffee. For the Small Flying Eagle grinder, which is most commonly used by pour-over enthusiasts, settings #3.5~#3 provide moderate concentration and are most suitable for pour-over brewing. If adjusted coarser to setting #4, it can also be used for pour-over brewing of dark roast beans or light-to-medium roast coffee beans. However, the extraction rate will be too low, so be prepared for under-extraction and a too-thin mouthfeel.

Brewing with setting #3 is the safest option, suitable for light roast, medium roast, and medium-dark roast for popular tastes. However, if dark roast beans are brewed with #3, they might become too strong and bitter. Adjusting half a setting finer to #2.5 will increase the extraction rate by about 0.5%~1.5% compared to #3, which is a significant variation. This reduces the margin for error, and if the water temperature is too high or the extraction time is too long, even a slight mistake can easily result in unpleasant coffee.
