Yirgacheffe represents the finest specialty coffee from East Africa, featuring distinctive and unusual citrus fruit aromas and floral notes that make it one of the world's most unique coffees. Relatively rare and expensive, it is produced in the high-altitude plateau region of 4,000 feet in the Sidamo province of Ethiopia, within a relatively high and narrow area. Yirgacheffe achieves a quality that general Mocha varieties cannot match.

Coffee trees originated in Ethiopia, where they were initially wild plants. The name "coffee" derives from the Ethiopian town "Kaffa." The coffee beans growing on these trees are full and plump, with a slight wine-like aroma.

Humans may have known how to cultivate coffee trees as early as the 9th century. Ethiopia has such a legend: coffee was initially used by monks to stay awake during evening prayers. Today, Ethiopia is an important coffee-producing country, with approximately 12 million people engaged in coffee production.

Coffee beans must be processed immediately after harvest, otherwise they will begin to ferment and develop off-flavors. There are two processing methods: "natural processing" and "washed processing," and different processing methods result in different flavor profiles.

Natural Processing

After harvesting, the fruits begin the sun-drying process without any treatment. This is the oldest existing processing method. The drying process typically lasts about 4 weeks. The processing method must be very rigorous to ensure the coffee maintains all its flavors.
