Roasting is essentially the process of heating and scorching raw coffee beans, but this is merely the surface phenomenon. The ultimate goal is to maximize the extraction of each raw bean's unique characteristics or features through the appropriate roast degree, then stop the heating at precisely the right moment. This is how we can赋予 each coffee bean its optimal quality.

Dividing Roast Degrees into 8 Stages

As mentioned earlier, roast degrees can be divided into 4 to 32 stages, but under normal circumstances, they can be categorized into 8 main stages as follows:

① Light Roast/Cinnamon Roast (equivalent to Light Roast)

② Medium Roast/High Roast (equivalent to Medium Roast)

③ City Roast/Deep City Roast (equivalent to Medium-Dark Roast)

④ French Roast/Italian Roast (equivalent to Dark Roast)

It should be noted here for beginners that there are generally two "cracks" during coffee bean roasting. The so-called "crack" refers to the sound of coffee beans expanding and splitting as they heat up. Due to these cracks, the coffee beans will expand.

① In light roast levels, light roast refers to coffee beans roasted until just before the first crack begins; cinnamon roast refers to roasting during the occurrence of the first crack.

② In medium roast levels, medium roast means coffee beans are roasted until the end of the first crack; high roast refers to roasting until the coffee beans' wrinkles begin to smooth out and the aroma changes.

③ In medium-dark roast levels, city roast refers to coffee beans roasted until the second crack period, while deep city roast refers to coffee beans roasted until the end of the second crack period.

④ In dark roast levels, French roast refers to roasting until the coffee beans are black but still retain some brown coloration, while Italian roast refers to roasting until the brown color disappears and the beans become completely black.

Knowledge Point: The intensity of acidity and bitterness is not inherently predetermined. It is only after roasting at a certain degree that coffee develops its specific "flavor profile."
