The grind size of coffee beans determines how quickly substances from the coffee can dissolve into water. This is because, with the same beans, finely ground coffee has a larger surface area contact with water compared to coarsely ground coffee. For example: fine sugar dissolves faster than granulated sugar, and fine coffee powder also dissolves faster than coarse coffee powder.
The size of coffee particles also affects the speed at which water passes through them. Water flows more quickly through large stones than through fine sand.
After coffee beans are ground, their thickness in the container increases because gaps are created between the particles.
If your coffee grinder is not of high quality, it might produce particles of uneven sizes. When brewing coffee, different coffee particles dissolve at different rates, which can easily lead to uneven extraction. This is similar to cooking meat—if some pieces are large and others are small, the small pieces will be cooked while the large pieces are still undercooked. To have all the meat cook at the same time, you need to cut it into pieces of the same size.
The standard grind size for pour-over coffee is medium-fine, using granulated sugar as a reference. Of course, some friends may prefer a finer grind.
Equipment Needed
1. Coffee grounds (grind size: medium) 20g (corresponding to 300ml water)
2. Hario V60 pour-over dripper
3. Measuring cup
4. Mug
5. Filter paper
Brewing Method
1. After boiling water, first warm the equipment. Pour the water from the measuring cup into the mug to preheat it.
2. Set up the dripper and filter paper, add coffee grounds, and level the surface.
3. Slowly pour hot water over the entire surface of the coffee grounds until drops begin to fall from the bottom, then let it rest for 20-30 seconds.
4. After the bloom, begin the pour-over. Slowly pour hot water in a spiral pattern from the center outward in circular motions.
5. When the extraction reaches 200ml, separate the pour-over dripper from the measuring cup (even if there is remaining water).
6. Pour out the preheated water from the mug and pour in the freshly brewed coffee (if the cup handle is too hot, be careful to use heat-resistant tools to prevent burns).
