For coffee brewing, first we need to determine the water-to-coffee ratio. The water shouldn't be too much or too little. The grind size is recommended to be cupping grind, and each grinding device will have a recommended grind setting. Determine the water temperature and total brewing time. Water temperature: 93°C, 18g of coffee with 288ml of water, total time is 2 minutes.

We all know that the factors affecting pour-over coffee are multifaceted, and grind size is one of them. Grind size generally refers to the size of coffee particles. To put it simply, the size of coffee particles affects the contact time between coffee and water.

Under the same parameters, the finer the particles, the higher the extraction rate. The finer the coffee is ground, the larger the contact area with water, resulting in a higher concentration of dissolved coffee. Conversely, the coarser the coffee is ground, the smaller the contact surface area with water, resulting in a lower concentration of extracted coffee.

Previously, someone asked the editor, "If I want to extract more substances and more coffee flavors, can I grind the coffee finer?" It's not impossible, but you should know that when making pour-over coffee, if the coffee is ground finer, there will be more fine powder, which easily clogs the filter paper holes. Once water has difficulty passing through the filter paper, the coffee extraction speed slows down, and the extraction time is prolonged. This leads to coffee that is bitter and complex, difficult to swallow. Of course, if you're a pour-over expert who knows how to utilize fine powder well, that's another matter~
