Grind size refers to the size of coffee particles. Simply put, the size of coffee particles affects the contact time between coffee and water.

Grind coarseness determines the amount of contact surface and extraction speed. Fine grinding allows hot water to extract more substances in the same time. However, if ground too fine, it might extract too many substances, leading to over-extraction. If you choose coarse grinding, hot water will extract fewer substances in the same time. Conversely, if ground too coarse, it might extract too few substances, leading to under-extraction.

Grinders are mainly divided into blade grinders and burr grinders. For hand pour coffee grinding, burr grinders are preferred. When grinding coffee beans, blade grinders often cut unevenly, producing extremely fine powder. However, burr grinders can ensure stable and uniform grinding degrees. Therefore, burr grinders are superior to blade grinders.

The finer the grind, the stronger the bitterness; the coarser the grind, the lighter the bitterness. If particle sizes differ, the extraction degree of each particle will vary, affecting the coffee's taste. Therefore, coffee grind size can match sugar particle size, which is a widely applicable grind degree.

Coffee grind coarseness can control bitterness, but different coffee brewing methods require different grind sizes. Generally, extremely coarse grind is suitable for cold brew extraction; coarse grind is suitable for French press; medium-coarse grind is suitable for drip filtration; medium grind is suitable for hand pour or cone-shaped filter bowl drip filtration; fine grind is suitable for espresso; extremely fine grind is suitable for Turkish coffee.

Beginners are advised to start with medium grind for hand pour coffee. After all, grinding medium powder doesn't easily produce extremely fine powder, nor does it easily cause water accumulation on the filter cup due to unstable water flow control at the beginning, which would soak the coffee powder and lead to over-extraction. Additionally, because individual tastes vary, you can try more between medium and fine grinds to find the coarseness that suits you. The grind size for hand pour coffee is medium-fine, using fine sugar particle size as the standard when grinding.

There are many varieties of hand pour coffee. You should choose according to your flavor preferences. Simply put, choosing Arabica coffee beans is basically never wrong. Varieties like Blue Mountain, Kona, Geisha, and Yirgacheffe are all Arabica varieties.
