After many tests conducted in our store, the results were far from ideal. Today, I'll share the testing process and how to choose the appropriate grind size.

First, I conducted tests by reducing the grind size. Our store uses two grinders: a small Fuji and a large Fuji. Since this test used the hand drip method without stable data, I won't list the details and will explain with examples directly:

After conducting these crude tests, I discovered that regardless of how fine the grind, the resulting flavors were surprisingly consistent, with differences only in concentration. Additionally, due to the high extraction rate and high substance concentration, the resulting sweetness was remarkably rich.

Some might ask: "After adjusting the grind to be finer, the flow rate slows down, so how can the time remain consistent?" A stable flow rate was the greatest assurance that supported my testing process.

However, the dreaded "but" arrived again. Besides the rich flavors and excessive sweetness, the impurities were also alarmingly numerous. After drinking, the mouth and throat felt exceptionally dry, beyond just astringency. After testing several cups at each grind size, I concluded that this problem was caused by the increase in ultra-fine particles.

The working principle of a grinder isn't what most people imagine - like cutting beans with a knife, but rather similar to grinding, which crushes coffee beans into finer particles. Therefore, during the grinding process, ultra-fine particles are produced due to collisions. Ultra-fine particles are coffee particles smaller than 100μm or broken cell fragments.

If the filter paper is effective, under ideal conditions, decreasing or increasing the grind size won't affect the coffee flavor at all. Grinding shouldn't be one of the variables; grind size only increases the total amount of similar substances (affecting concentration), not the variety of substances. When using the same water, time is the key to adjusting the variety of substances. After adjusting the grind size, the increase in extraction time is due to the filter paper.

Regardless of the type of grinder used, the grind size of coffee should be based on fine sugar granules as a standard, and then adjusted accordingly. Single-origin beans used for hand drip coffee, as many know, are most commonly Arabica. There are many different varieties of single-origin beans on the market, such as Typica, Yellow Bourbon, Geisha, Pacamara, Caturra, Catuai, etc. These are all commonly used beans for single-origin coffee with excellent quality.

Knowledge point: Hand drip coffee uses single-variety, single-origin coffee beans manually brewed. Connoisseurs even roast and grind their own beans.
