Step-by-Step Pour-over Coffee Guide

Step 1: Boil Water

Set temperature between 88-92°C (Temperature is a crucial factor affecting pour-over coffee, which we'll share in a dedicated future article).

Step 2: Fold the Filter Paper

Step 3: Rinse the Filter

Use 100-150ml of hot water to rinse the pour-over filter (There are many types of filter papers; here we use bio-bleached filter paper as an example, which we'll discuss in a future article about filter papers for pour-over coffee). Let the hot water flow into the serving pot.

Step 4: Weigh Coffee Beans

Calculate based on 10g per cup of coffee.

Step 5: Grind Coffee

Grind to a consistency similar to coarse sugar (The grind size will be adjusted according to the roast level of coffee beans, water temperature, and brewing time, which we'll share in a future article about grinding). Pour the ground coffee into the filter cup and gently tap the filter cup to level the coffee bed.

Step 6: Discard Warm Water

Pour out the warm water from the serving pot.

Step 7: Test Water Temperature

Test if the water temperature in the pour-over kettle is suitable for the coffee grind size (This step is for those without a temperature-controlled kettle. If you use a temperature-controlled kettle like mine, please ignore this step).

Step 8: Bloom

Quickly pour 1.5-2 times the amount of hot water compared to the coffee grounds, controlling the pour within 5-8 seconds. It's ideal when just a few drops of coffee liquid fall into the serving pot. This process is called blooming. Bloom for approximately 10-30 seconds, with blooming time depending on the roast level (Blooming is the foundation of extraction, which we'll share in a dedicated future article).

Step 9: Pour Water

Start pouring from the center point of the filter cup, slowly drawing concentric circles with a small water stream, moving from the inner layer to the outer layer, and then from the outer layer back to the inner layer (There are many schools of brewing methods; this is just one of them, which we'll share in a future article).

Step 10: Coffee-to-Water Ratio

The ratio of coffee grounds to hot water, which we call the coffee-to-water ratio, should be controlled around 1:15. For example, with 10g of coffee grounds, after subtracting the water used for blooming, the total coffee amount should be controlled around 150g (The coffee-to-water ratio is also a particularly important parameter in pour-over coffee, which we'll cover in a dedicated future article).

Step 11: Warm the Cup

Coffee prefers a warm environment. Pour a small amount of hot water into the coffee cup. After the cup becomes warm, pour out the water, pour the coffee into the cup, and start enjoying!
