FrontStreet Coffee - Coffee Bean Degassing Introduction
During the first few days of the coffee cycle, beans enter a degassing period, beginning to release carbon dioxide and undergo various chemical changes involving fats, carbohydrates, amino acids, water, and proteins. This process is most vigorous during the first five to seven days, then gradually weakens. The one-way degassing valve prevents air from entering the bag from outside, avoiding moisture or contaminant gases from entering, while allowing the released carbon dioxide to escape, preventing compression inside the bag that could prevent some roasted coffee beans from degassing.
The one-way degassing valve isn't as miraculous as some might think. After dismantling a one-way degassing valve, a student discovered that it's not 100% unidirectional - with extreme methods, gas can still be forced back through the valve. However, under normal non-violent conditions, it works reliably.
In terms of flavor, coffee beans stored in bags with one-way degassing valves show slightly better flavor performance compared to beans stored in completely sealed containers after the degassing process is complete.
If you choose to store beans using a one-way degassing valve after they've finished degassing, it's recommended to seal the valve with transparent tape. Therefore, when packaging with one-way degassing valves for delivery to customers, this is a good choice. When beans arrive via delivery, the second consideration is storage. For bean storage, it's recommended to keep them away from light, moisture, in sealed conditions, and free from odors.
There's no need to refrigerate them. Although after a champion stored coffee at sub-zero temperatures, the idea that refrigerating coffee beans is necessarily better emerged. When temperature drops, the internal structure of coffee beans becomes more compact, which can indeed make the coffee flavor more concentrated. However, the storage temperature used in competitions was -75 degrees Celsius, while our household refrigerators typically cannot reach this level. If you must refrigerate, freeze them (don't place in the refrigerator compartment, as coffee beans themselves have deodorizing properties, and through the box or bag containing the beans, they might absorb "refrigerator odors"). However, when beans return to room temperature, the moisture or water droplets formed from the contact between cold and heat might be counterproductive.
Beans taste better after the degassing period. It's recommended not to frequently interrupt the degassing process. After receiving delivery, you can open them to satisfy curiosity, then let them rest and degas properly. When they're ready, the beans will provide the greatest surprise. Different beans roasted by different roasters have varying degassing periods and optimal flavor times. After purchase, you can ask the seller about this, as well as suitable brewing water quality.
Knowledge Point: Generally speaking, degassing is primarily aimed at espresso extraction and doesn't have as many requirements for pour-over coffee - 3-4 days is sufficient.
