This article will guide you through understanding what bean resting truly means.
Carbon Dioxide - The Breathing of Coffee Beans
Taking pour-over coffee as an example, when hot water is added for blooming, carbon dioxide is released in large quantities, creating a sensation as if the coffee beans are "breathing." This is also a standard many use to judge whether a cup of pour-over coffee is "fresh enough." The Crema in Espresso is also carbon dioxide enveloped in fine foam, so when freshly roasted coffee beans are brewed, they produce a beautiful layer of Crema. When drinking Espresso, you can observe the freshness of the coffee brewed by the shop. Dark red and ochre-colored Crema indicates that the coffee is still very fresh, while golden color, though beautiful, is not as fresh.
The fresher the coffee, the higher the carbon dioxide content. However, if you had to restock at the coffee shop every two or three days, it might not be practical and would seem troublesome. Coffee beans are a precious product, easily affected by humidity, oxygen, light, or heat. The best way to store them is in a cool, dry place, while preventing air contact is the most difficult challenge, especially given Taiwan's humid air.

That's right, one-way valves achieve this effect. Coffee bean bags/cans with one-way valves allow the carbon dioxide released by coffee beans to sink, thereby pushing out the lighter oxygen and nitrogen from the bag/can. Just as cut apples turn yellow when exposed to oxygen, coffee beans also begin to deteriorate when they encounter oxygen. To prevent these deterioration factors, using packaging with one-way valves is the correct choice. Coffee hunters use one-way valve packaging when shipping their products!
General Bean Resting Time - How to Distinguish by Roast Level
Actually, there is no specific timeline for bean resting; it can only be based on experience or recommendations from the roaster.
The recommended resting time for extremely light roast is 14 days; light roast is 10 days; medium roast is 7 days; medium-dark roast is 4 to 5 days. These are the general recommended resting times as mentioned above. Because in pour-over single-origin coffee, the blooming stage is sufficient to awaken the coffee. For espresso beans, the general resting time should be 21 days, but commercial-use coffee beans don't have that much time to rest, so they are exposed to air to accelerate the awakening process, allowing the coffee beans to reach a smooth stage. If brewed too early, it might result in an unpleasant, throat-catching experience.
Key Point: Mastering bean resting after roasting, equipment purchasing, and most importantly, grinding beans will allow you to brew a good cup of coffee at home.
