Two days after roasting, coffee beans have released carbon dioxide and other volatile gases. Next comes the tricky part - we need to put them into the coffee grinder, while the beans' chemical properties are constantly changing. This requires baristas to adjust the grind setting in a timely manner to extract the desired compounds. Coffee beans are always playing games with us, constantly keeping us busy making adjustments to ensure extraction stability.

If we can't extract good compounds, we can't achieve the most basic quality control. This is especially critical for busy coffee shops with many customers.

During the 2-6 day period after roasting, coffee continues to lose compounds, but still requires barista adjustments. During this time, the brewed coffee tastes better and better, becoming more distinctive and receiving higher ratings.

At 5-6 days after roasting, coffee beans become more user-friendly than before. With fewer volatile substances, the coffee's quality rating improves remarkably. At this point, the coffee beans are no longer stable, but grind adjustments are still necessary.

Between 8-14 days after roasting, the brewed coffee tastes simply perfect, achieving a balance between freshness and flavor.

After 14 days, the freshness of coffee beans continues to decline. However, the coffee flavor diminishes relatively slowly. The "adolescence" has passed, and vitality fades with time. This process happens slowly, but after 21 days, coffee beans begin to "lose their strength," with flavor deterioration accelerating. Flavors are still present but no longer as bright.

Key Point: The optimal flavor window is 8-14 days after roasting. The older the coffee beans, the more you need to adjust the grind setting.
