Some coffee beginners, when first learning, mistakenly believe that coffee beans roasted yesterday can be brewed and consumed today to obtain the freshest flavor. However, when brewing, they discover the taste isn't as good as imagined and even suspect whether their technique has problems. It's not until trying two weeks later that they gradually find the flavor improving, but by then, that batch of coffee beans is nearly finished. This represents the failure to give coffee beans adequate resting time, making it impossible to brew them at their optimal state. This is a common small mistake among novices, but without experiencing errors and trying, how would one know what better flavors exist?

Coffee beans are like living beings - humans age through cellular oxidation caused by oxygen intake. Freshly roasted coffee is still too immature and hasn't reached its most mature stage. Just like people, who become more mature through the growth of time, coffee beans need some time as well.

Why does this situation occur fundamentally? Because once coffee beans are roasted, the flavor composition is largely determined. Many people attribute the deterioration of coffee beans to their natural daily changes. But as mentioned earlier, everything undergoes slight changes through oxidation, affecting taste. While this might not be as noticeable with apples, coffee clearly shows flavor changes.

Freshly roasted coffee beans release large amounts of aroma compounds and carbon dioxide through small pores created during roasting. When grinding, these carbon dioxide gases escape. During the brewing process, this actually prevents proper contact between coffee grounds and water, resulting in insufficient flavor extraction. As time progresses and the carbon dioxide layer becomes thinner, increasing the contact area, the coffee becomes more flavorful. Therefore, many people don't call this process "bean resting" but rather a degassing or exhaust process.

Past the Optimal Flavor Window

You might wonder: If I wait until all the carbon dioxide disappears, wouldn't it be very aromatic?

Don't forget that aromatic compounds are also continuously lost over time. By the time you brew the coffee, it might only retain bitterness, with the desired acidity and sweetness having dissipated. Following the degree of roast or the shop's recommendations for resting time is the better choice. Additionally, during the resting process, it's recommended to shake the container to allow coffee beans at the bottom to come to the top and get some air.

The moment coffee beans finish roasting, their flavor window begins counting down. After the resting period, there's approximately two weeks of optimal drinking time - similar to how coffee hunter services calculate in two-week periods. During the optimal flavor window, coffee beans might develop oil on their surface, which is actually normal but serves as a small warning sign that the coffee bean's flavor is beginning to decline more rapidly, reminding you to brew them quickly to avoid wasting delicious coffee beans!

Key Point: The optimal flavor window is 8-14 days after roasting. The longer coffee beans are stored, the more you need to adjust the grind size.
