Colombian Huila is the finest gem among Colombia's premium coffees. Its balance is widely recognized as the best, earning it the reputation of being Colombia's national treasure.

Thanks to superior geographical and climatic conditions, Colombian coffee has consistently maintained high quality standards. Typically, Colombian coffee beans without special market trademark names come from the National Federation of Colombia Coffee Growers—a very large federation spanning across Colombia. This organization has always been known for its strict quality control and active promotion efforts.

In Colombia's coffee bean grading system, Supremo is the highest grade, representing the largest and fullest premium coffee beans with minimal defective beans and impurities. Excelso, on the other hand, consists of smaller, more common-grade beans. Colombian coffee features balanced flavor, rich acidity, unique flavor characteristics, relatively full body, and sometimes carries hints of red wine notes and admirable fruit flavors.

Colombia's premium coffee-producing regions are mainly in the south, at elevations above 1,500 meters, including San Augustin in Huila Province, Popayan in Cauca Province, Nariño Province, and Tolima Province. Products from these areas all feature delicate acidity and berry aromas, with caramel notes and abundant sweetness.

Huila

Huila Province is located in the southern part of Colombia's central mountain range and is the country's most renowned specialty coffee-producing region. This area consists of hills surrounded by mountains, with cultivation elevations above 1,500 meters. Colombia's most important rivers converge here, bringing abundant water resources and moisture.

Contrary to the general impression of Colombian commercial coffee as balanced and smooth, many micro-batch specialty coffees produced by small farmers actually possess distinct regional flavor characteristics.

In recent years, with the international market's emphasis on coffee quality and demands for specialty coffee, there has been a gradual shift away from the original bean-size-based grading system. Instead, the focus has moved to micro-batches provided by small farmers from micro-regional production organizations (Micro-regional selections). Dozens of small farmers contribute their individual harvests to create a micro-batch for sale. This approach provides more opportunities to select many excellent quality, specific small-farmer coffees through batch-by-batch cupping.

Knowledge Point: Colombian coffee grading is primarily based on coffee bean size, with SUPREMO (above 17 mesh) being the largest.
