Colombian Huila is the finest specialty among Colombia's premium coffees. Its balance is recognized as the best coffee, known as Colombia's national treasure.

Because the Huila region has mountainous terrain, and coffee is grown on the slopes of canyons, it enjoys high altitudes suitable for growing quality Arabica beans, as well as appropriate temperatures. The climate of the canyon slopes not only prevents cold winds from entering, with mountain breezes providing cooling without high temperatures, but rainfall is also relatively abundant, making it a uniquely advantageous coffee cultivation area.

Furthermore, Colombian coffee workers all manually harvest coffee bean fruits (also known as coffee cherries) by going up the mountains, allowing for careful selection of the most mature and plump fruits. Additionally, most coffee beans use washed processing, and after medium roasting, they have a light and silky taste, sometimes with a hint of acidity, unlike the strong flavors of Brazilian coffee and Italian Espresso. In Colombia, it's known as "green gold."

The specialty coffee varieties produced in Huila are mainly Caturra and Typica, with flavor profiles showing distinct fruit acidity and sweetness, suitable for various roasting levels. Huila's specialty coffees are perennial champions in international cupping competitions. Local coffee farmers believe this is related to the frequent volcanic activity near the Huila region, which emits fertile volcanic ash.
