Sumatran Mandheling features woody notes and a rich, full-bodied flavor with low acidity. Due to local environmental conditions, the wet hulling processing method developed there allows Sumatran coffee to develop unique flavors. The most prominent flavors include cedar, cocoa, herbal notes, fermented fruits, and tobacco.

Sumatra Island is the largest island in Indonesia, located on the equator and belonging to a tropical rainforest climate. With high temperatures, humidity, and abundant rainfall, coffee smallholders typically plant in primitive mountain areas where water resources are precious. Therefore, the unique "wet hulling" segmented drying processing method (Giling Basah) was developed locally. This processing method adds different flavors to Sumatran coffee compared to other regions. Among coffee beans produced in Indonesia, 25% are Arabica and the remaining 75% are Robusta. Only the fine Arabica coffee from northern Sumatra is marketed as Lintong and Mandheling.

Mandheling coffee is produced in Sumatra, Asian Indonesia, also known as "Sumatran coffee." Its flavor is very rich, aromatic, bitter, and full-bodied, with a slight sweetness. Most coffee enthusiasts generally drink it as a single origin, but it is also an indispensable variety for blending mixed coffee.

To be precise, Lintong refers to coffee grown in a small area in the southwestern part of Toba Lake in the Lintong administrative region.

Coffee smallholder planting areas are scattered across high, undulating clay plateaus covered with ferns. Lintong coffee is not shade-grown, does not use chemical products, and is almost entirely owned by small private owners. Mandheling is a broader term that includes Lintong coffee and planting areas with similar conditions in Diari [capital Sidikalang] and the northern part of Toba Lake.

Mandheling coffee beans are relatively large in size and hard in texture. They are prone to defects during the growing process, so after harvest, they usually undergo strict manual selection.
