The washed processing method involves removing the peel and pulp from harvested coffee cherries, leaving the seeds with a layer of residual mucilage placed in water tanks for fermentation. The entire fermentation process takes approximately 24-30 hours.

Harvested coffee beans must immediately enter the processing stage, otherwise they will begin to ferment, causing the beans to develop off-flavors. There are two processing methods: "natural drying" and "washed processing," each resulting in different flavor profiles. Natural-processed beans have complete natural richness, gentle aromatics, and more body; washed processing offers good richness, high aromatics, and vibrant acidity. Compared to natural processing, washed processing provides significantly better quality control. During the washed processing process, defective beans floating on the water surface can be easily removed. The flavor profile is less likely to have impurities because of the short fermentation time, and the beans are thoroughly cleaned in water tanks. Therefore, washed processing presents a clean, flawless flavor profile.
