Pour-over Coffee Brand Bean Recommendation - Brazil Capricornio California Fermented Yeast Controlled Fermentation
Capricornio Coffee is a renowned specialty coffee brand from Brazil, with partner farms spread across regions such as Sorabana, Norte Pioneiro, Garça and Marilia, Alta Mogiana, and Circuito das águas Paulistas. Most of these locations are situated on both sides of the Tropic of Capricorn. Combined with the brand's strict requirements for coffee cultivation, harvesting, and post-processing procedures, this aligns perfectly with the cautious and meticulous characteristics of Capricorn, hence the adoption of its name and image as brand identification.
Capricornio's farms are mostly located on the southern edge of the coffee belt. Although situated in medium-altitude regions, their latitude is relatively high for Southern Hemisphere coffee-producing areas. The tropical, subtropical transition zones and microclimates create distinct four seasons and significant day-night temperature variations, which help coffee cherries mature slowly and accumulate sugars. Recently, this area has become an emerging popular producing region. The brand's full promotion of the "Four Seasons Project" (similar to "Ethiopia - Red Cherry Project" and "Burundi - Long-term Project") has led to the modernization of partner farms, ecological sustainable development, and technical improvement and guidance in cultivation, harvesting, and post-processing processes. This has enabled their farms to achieve remarkable results in COE and various domestic green bean quality competitions in Brazil, winning numerous awards (the Fazenda California from this year's bean list has won COE championship twice), while also effectively increasing farmers' incomes.
Fazenda California
Fazenda California is a partner of Capricornio Coffee, located in the city of Jacarezinho, Paraná state, Brazil. It is a renowned farm with over a century of history. The microclimate in this area creates distinct four seasons and significant day-night temperature variations. The region is covered with fertile volcanic soil, known for producing high-quality green beans, and has historically won numerous awards (including two COE championships). It also holds UTZ and Rainforest Alliance certifications. It won the COE championship in 2010 and 2015, along with multiple Paraná State Contest awards.

Knowledge Extension
Brazil not only produces excellent specialty coffee but is also an essential base bean in many coffee blends. The most prominent characteristic of Brazilian coffee is its mildness, which allows people to enjoy it without excessive concern about bitterness or acidity. It has a smooth mouthfeel and is suitable for pairing with various types of coffee. The gentleness behind Brazilian coffee is also inseparable from Brazil's own coffee conditions.
