Many people drink coffee every day. If you ask them, "How is this coffee?" Most people would say "it's fragrant" or "it's refreshing."
However, those who understand coffee would say: "This coffee has caramel aroma, full and lively acidity, quick transition to sweetness, with a long aftertaste." This isn't because their sense of smell is naturally more sensitive—it's because they've systematically studied coffee knowledge. Coffee cherries are a fruit, so coffee must have acidity—that's fruit acid, an essential element in coffee. Without acidity, coffee can be said to have no soul.
Good fruit acidity is completely different from the sharp, astringent sensation of spoiled acidity!
"Acidity" comes in different forms: stimulating acidity; gentle, fruity, fragrant acidity; and acidity similar to fermented fruit.
Imagine eating a green-skinned orange (unripe) or pure lemon juice—that's stimulating acidity.
Imagine eating a yellow-skinned orange or apple (ripe)—that's the kind of acidity that makes you salivate, a lively, gentle, and fragrant acidity.

We call this natural reaction of salivation and sweet return "sweet-sour resonance"—coffee beans with delicate acidity and distinct, refined floral and fruit flavors are usually lightly roasted, as delicate aromas can be easily destroyed by prolonged high temperatures. This is why each different coffee bean personality requires careful handling.

After years of experimentation, La Esmeralda discovered that only Geisha beans harvested from coffee trees growing at altitudes above 1,400 meters can display the special flavors that Geisha beans should have. Therefore, the main grading system is based primarily on planting height, supplemented by actual cupping results, dividing Geisha beans into "Red, Green, Blue Label" grades.
Because Green Label Geisha doesn't participate in the BOP (Best of Panama) competition, its price isn't as expensive as Red Label Geisha. However, for La Esmeralda, the Green Label is like in the wine world—how the top-tier Lafite estate has its Carruades de Lafite, much cheaper than the Grand Vin, yet possessing the same top-tier quality!
