Stale coffee not only tastes bland but also loses its aromatic qualities. From the instant coffee of the first coffee wave, to the espresso of the second wave, and now to the specialty coffee of the third wave, people are paying increasing attention to coffee quality. A key element of quality is "freshness." What exactly makes coffee beans fresh?

Degassing Period

Freshly roasted coffee beans should be promptly packaged in bags with one-way degassing valves for a 1-2 day degassing period to allow carbon dioxide to escape, ensuring more thorough contact between coffee grounds and water during extraction. Coffee beans are like living beings - just as humans age through cellular oxidation caused by oxygen intake, freshly roasted coffee is still too tender and has not reached its optimal mature state.

Freshest Period

Starting from the end of the degassing period, approximately two weeks constitute the freshest period. During this time, coffee beans produce abundant aromas that form the captivating flavors of coffee.

Relatively Fresh Period

Beginning after the approximately two-week freshest period ends, coffee beans in the package gradually decline from their peak state. However, the quality and flavor decline slowly at first, maintaining a relatively high level of freshness. We call this the "relatively fresh period," lasting about one month. Using roasted coffee beans before the end of this period is something every coffee enthusiast and café owner should strive to achieve.

Disposal Period

Starting after the approximately four-week relatively fresh period ends, the quality and flavor of roasted coffee beans are significantly diminished and can hardly be described as "fresh," unable to meet the discerning demands of professionals. However, they are still adequate for mixing with milk and chocolate sauce to make flavored coffee drinks.

As an agricultural product, coffee has a limited shelf life. Coffee beans have a shelf life of one year but a flavor period of only one month. Coffee can still be consumed after the flavor period, but it's best not to drink it after the shelf life expires. Meanwhile, Blue Mountain-style coffee is made from blended beans with similar flavor profiles to Blue Mountain coffee. Although the acidic, sweet, and bitter flavors may be similar, it lacks the authentic richness of genuine Blue Mountain and is essentially counterfeit Blue Mountain.
