FrontStreet Coffee - Introduction to Blue Mountain Coffee
Jamaica's weather, geological structure, and terrain together provide a uniquely ideal environment. Designated Jamaica Blue Mountain Coffee can only be grown in the Blue Mountain region, located northeast of Kingston on Jamaica Island.
Coffee grows on mountains up to 1800 meters (approximately 6000 feet) high, which is quite high altitude for Arabica coffee. Moreover, the mountains are very rugged, making the harvesting process extremely difficult (coffee harvesting is done almost entirely by women). The trees are mainly of the Arabica "Geisha High Bred" variety.
Seeds from these trees have been exported to other countries, such as Hawaii, Kenya, Papua New Guinea, and other places, but nowhere have they been able to recreate the flavor found in Blue Mountain coffee beans.
The Blue Mountains are located in the coffee belt, with the highest peak reaching 2256 meters, making it the highest peak in the Caribbean region. It features fertile volcanic soil, fresh and unpolluted air, and a humid climate. The abundant rainfall in the Blue Mountain area, year-round fog, and low temperatures, with an average temperature of about 20°C, all contribute to an excellent growing environment for Blue Mountain coffee.
Coffee grown in this natural environment possesses all the characteristics of fine coffee. Not only is it rich and mellow in flavor, but the perfect balance of sweetness, acidity, and bitterness gives it a slight high-quality acidity and minimal bitterness that is brief and doesn't linger in the mouth. It transforms into a subtle sweet sensation upon swallowing, with a mellow throat aftertaste that leaves one wanting more. Such unique flavor has earned it a place among the ranks of "premium coffee."
Only coffee that is centrally purchased and processed by the four legally designated estates certified by the Jamaica Coffee Industry Board (CIB) can be called Blue Mountain.
Global 100% pure Blue Mountain coffee refers specifically to coffee produced within the designated range of the Blue Mountains in eastern Jamaica. Every step of its cultivation and processing undergoes quality management according to the strict standards of the Jamaica Coffee Industry Board, only then can it be certified as "Pure Jamaica Blue Mountain Coffee."
Pour-Over Coffee
Kalita Wave Style:
The Kono dripper uses air pressure generated by the siphon effect for extraction. Therefore, the initial water saturation of coffee grounds and immersion-style extraction increase concentration, allowing soluble substances to be carried out with the water flow. For those who prefer a heavier-bodied Blue Mountain coffee, this method is recommended.
Prepare 15g of coffee grounds, water temperature at 88°C, grind size at BG 6W (Chinese standard 20 mesh sieve, 47% pass rate), water-to-coffee ratio of 1:15.
Technique: First bloom with 30g of water for 30 seconds. Pour water close to the surface of the coffee grounds. For the first pour, add water up to 120g and stop. Wait until the water level drops by 1/3 to 1/2, then perform the second pour, adding water up to 220g. Control the total brewing time to around 2 minutes and 00 seconds. If time is sufficient but the coffee hasn't finished dripping, you can discard the remaining liquid.
Knowledge Expansion:
The annual production of Blue Mountain coffee is only about 240 tons, making its price relatively expensive.
