Currently, the highest quality coffee beans in the world mainly come from three varieties: Arabica, Robusta, and Liberian.
Arabica Coffee Tree
Originating from Ethiopia, Arabica coffee beans account for 70% of the world's total production. World-renowned coffees such as Blue Mountain and Mocha are almost exclusively Arabica varieties. Arabica coffee trees are suitable for growing in high mountains with significant day-night temperature differences, as well as in low humidity and well-drained soil. The ideal altitude ranges from 500 to 2000 meters, with higher elevations producing better quality. Arabica coffee trees require fertile soil, adequate moisture, appropriate sunlight conditions and shade, and their species has poor resistance to pests and diseases, making them vulnerable to damage. The annual yield per unit area of coffee trees is also relatively low.
Sidamo Premium Coffee Region
The Sidamo premium coffee region is located in southern Ethiopia, southwest of the Yirgacheffe area. As is well known, Ethiopian coffee has always been synonymous with premium coffee and is among the world's finest coffees. Ethiopia is also the birthplace of coffee. Ethiopian coffee is basically named after its region of origin, such as the well-known Yirgacheffe region producing Yirgacheffe coffee, and the Sidamo region producing Sidamo coffee.
The industry in the Sidamo area is predominantly agricultural, with coffee growing areas mainly located around the Great Rift Valley. The altitude ranges from 1500 to 2200 meters, featuring high elevation, abundant sunshine, and plentiful rainfall. The greatest advantage of this region lies in its soil fertility, which is maintained through the recycling of organic matter, using fallen leaves from surrounding trees or plant residues as fertilizer. The original ecological growth environment creates significant differences and characteristics in the coffee produced by towns in the area.
The coffee processing method has a profound impact on the flavor expression of coffee, and Sidamo coffee is no exception. Washed Sidamo coffee features a bright, clean taste characteristic, with fresh fruit and straightforward floral notes, with a bright and clear texture. Natural processed Sidamo coffee exhibits rustic yet rich fruit flavors, sweetness, juiciness, and ripe fruit notes, with a texture that has a red wine sensation. For example, Sidamo Flower Champion coffee reveals passion fruit sweetness and fragrance, which appears in both the dry aroma and the aftertaste.
