FrontStreet Coffee - Sidamo Guji, Arabica Variety Introduction
Currently, there are nearly 20 processing plants of various scales in the Hambella region. Hongshun, as a green coffee company "rooted" in Ethiopia's coffee-producing regions, has established four natural processing plants in the GUJI zone Hambella region through cooperation since 2016. In the 17/18 production season, they conducted a series of studies on natural processing methods using high-quality coffee varieties from this region. The four core processing plants in Hambella are: "Dire" Church Processing Plant, "Mansa" Pond Processing Plant, "Bobea" Red Flag Processing Plant, and "Goro Baessa" Mountain Spring Processing Plant.
Goro Baessa is a small village surrounded by mountains at an altitude of 2280 meters. December is its coffee harvesting season each year. During this time, the mountains are covered with bright red, mature coffee cherries, neatly arranged on African drying beds in the village - this is where "Hana Asabana" (formerly known as "Flower Champion") is processed.
The micro-batch Hana Asabana from the Mountain Spring Processing Plant, compared to last year's local mixed "Flower Champion," has more consistent bean shapes and cleaner processing. After cupping evaluation, this year's "Hana Asabana" not only possesses rich and enchanting floral notes, mellow red wine and tropical fruit flavors, but also has added bright, juicy acidity.

Brewing Recommendations
Brewing Method: Pour-over
Dripper: V60
Water Temperature: 88-90°C
Coffee-to-Water Ratio: 1:15
Grind Size: BG-6S (Chinese standard 57% passing rate through #20 sieve), which is medium-fine grind
Brewing Technique:分段式萃取 (Segmented Extraction). Use 35g of water for bloom for 30 seconds. When pouring with small circular motion to 127g, segment the pour. Continue pouring to 228g when the water level drops and is about to expose the coffee bed. Remove the dripper when the water level drops and is about to expose the coffee bed again (timing starts from bloom). Total extraction time is 1'52".
Flavor: Aromatic with floral and passion fruit notes. The entry features tropical fruits and citrus, with orange finish having a syrupy texture and obvious sweet aftertaste.
Arabica Coffee Introduction
Originally from Africa's Ethiopia, Arabica coffee features prominent fruit flavors with delicate and elegant mouthfeel. It is the main source of specialty coffee and has lower caffeine content, only 0.9-1.5% of coffee weight. It has the highest quality and value, is the main species in today's coffee consumption market, and accounts for about 60-70% of global production and sales.
However, Arabica is the most special among the 103 species in the Coffea genus. It is the only tetraploid plant species (with four sets of chromosomes) and is self-pollinating. Its advantages include lower caffeine content, and a flavor profile that is both delicate and clean. The other 102 coffee species are all diploid plants (with two sets of chromosomes) and cross-pollinating. Therefore, Arabica is a more precious species in the Coffea genus.
Knowledge Extension:
Typica is the most classic high-quality Arabica variety. Many current commercial improved varieties originate from this species.
