The washed Arabica beans from the Yirgacheffe region include 22 small farms certified by Fair Trade. They perfectly present the delicate and elegant floral and fruity aromas characteristic of coffee from this region, with a touch of refined orange blossom fragrance and nutty notes. Yirgacheffe coffee is one of the most distinctive coffees in the world, an outstanding representative of African washed coffee, and has always enjoyed a high reputation among global coffee connoisseurs. The high-quality washed Arabica coffee is suitable for various degrees of roasting and perfectly presents fresh and bright floral and fruity aromas, with very beautiful and complete bean shapes.

Yirgacheffe is famous for its coffee with unique jasmine flower fragrance and bergamot fruit aroma. However, due to changes in trade routes and considerations of commercial sales needs, these unique flavors have not only become rare but also more difficult to find.

Yirgacheffe coffee is produced in the mountainous region above 5,800 meters altitude in Ethiopia's Sidamo. Because this area is surrounded by misty valleys, it got the beautiful name Yirgacheffe, and can also be called witch coffee. The main reason for its worldwide fame is that in recent years, farmers in the misty valleys have used the washing method to replace the traditional sun-drying method to process raw coffee beans, making Yirgacheffe another synonym for coffee. Compared to ordinary washed G2 Yirgacheffe, its flavor is clearer and purer, possessing a charming sweetness like a beautiful girl's smile, with bright and delicate lemon acidity, elegant taste, fresh lemon, jasmine, ginger flower and other floral notes accompanied by traces of honey fragrance that make one feel refreshed all day. The wet aroma is like sweet syrup, like thick apricot pulp juice, wrapped in rustic honey or chocolate. The entry is not strong, with medium body, acidity is not obvious but lively and bright, like fruit tea.

Washed Processing Method

Washed processed coffee requires more resources (water) than sun-dried, so the produced washed raw coffee beans are of higher quality. The coffee beans are spread out on drying racks for drying, which allows for good ventilation, and to avoid over-fermentation, they regularly turn the coffee beans.

Sun-dried Processing Method

Sun-dried processed coffee has slightly larger particles, with slightly lower density and moisture content. Every coffee from this processing plant can be considered high-quality specialty processed coffee, and its exhibited characteristics are superior to other coffees. Regardless of the processing method used, coffee beans here can be considered high-quality coffee in the Yirgacheffe region.
